Toutes deux sont fabriqu\u00e9es \u00e0 partir de calcaire, r\u00e9cup\u00e9r\u00e9 par taille de pierre. Ce processus produit de la chaux vive. La chaux vive est souvent utilis\u00e9e comme dessiccant pour les snacks, entre autres, en raison de ses propri\u00e9t\u00e9s d&#039;absorption d&#039;humidit\u00e9.<\/p>\n\n\n\n<p><strong>Chaux<\/strong><br>Formule chimique : Ca(OH)\u2082 (hydroxyde de calcium)<br>Lorsqu&#039;on ajoute de l&#039;eau \u00e0 la chaux vive (un proc\u00e9d\u00e9 appel\u00e9 \u00ab\u00a0extinction\u00a0\u00bb), celle-ci chauffe. On parle alors de chaux \u00e9teinte. Certains produits, comme les sachets chauffants pour bento et boissons, utilisent ce proc\u00e9d\u00e9 pour g\u00e9n\u00e9rer de la chaleur en tirant sur une corde, selon le m\u00eame principe que la chaux \u00e9teinte.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-medium-font-size\"><strong>\u00c0 propos du processus de production de chaux raffin\u00e9e et hautement active<\/strong><\/h3>\n\n\n\n<p>L&#039;explication ci-dessus d\u00e9crit comment la chaux vive est produite par chauffage du calcaire. Les calcifications naturelles se pr\u00e9sentent principalement sous forme de calcium de biomasse et de calcium min\u00e9ral. Le calcaire n&#039;\u00e9tait pas extrait des mines, mais remplac\u00e9 par la chaux de coquillages, obtenue \u00e0 partir d&#039;hu\u00eetres et de palourdes grill\u00e9es. (Les coquillages sont compos\u00e9s de carbonate de calcium qui, une fois grill\u00e9s, produit de la chaux.) Il y a environ 420 ans, le peuple Hemudu a d\u00e9couvert la m\u00e9thode de cuisson de la chaux de coquillages. Aujourd&#039;hui, gr\u00e2ce \u00e0 l&#039;accent mis sur la r\u00e9utilisation des ressources, la chaux de coquillages est largement utilis\u00e9e, principalement comme calcium min\u00e9ral.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-medium-font-size\"><strong>Passer du charbon de bois au charbon de bois<\/strong><\/h3>\n\n\n\n<p>Les archives historiques montrent que ce n&#039;est qu&#039;\u00e0 partir de la dynastie Song qu&#039;une am\u00e9lioration r\u00e9volutionnaire fut apport\u00e9e \u00e0 l&#039;utilisation du charbon, des si\u00e8cles plus t\u00f4t qu&#039;en Europe. D&#039;apr\u00e8s ce document v\u00e9rifiable, <em>\u00ab L&#039;exploitation des \u0153uvres de la nature \u00bb<\/em>, de nombreuses industries manuelles de la dynastie Ming utilisaient des galettes de charbon. Lors de la combustion de la chaux, \u00ab\u00a0les cendres et le bois de chauffage repr\u00e9sentaient 19% de charbon et 11% de bois de chauffage.\u00a0\u00bb On pr\u00e9parait d&#039;abord des galettes de charbon \u00e0 partir de boue de charbon. Pour chaque galette, on empilait une couche de pierre sur le dessus, puis on \u00e9talait du bois de chauffage au fond, puis on br\u00fblait au feu. Cette m\u00e9thode consistait \u00e0 empiler alternativement des couches de charbon et de pierre, le bois de chauffage \u00e9tant \u00e9tal\u00e9 au fond pour allumer le feu.<\/p>\n\n\n\n<p>\u00c0 cette \u00e9poque, la strat\u00e9gie des fabricants de chaux consistait \u00e0 \u00ab\u00a0remplacer le charbon de bois par du charbon comme combustible pour la cuisson de la chaux\u00a0\u00bb. La temp\u00e9rature du four utilis\u00e9 pour le charbon de bois \u00e9tait limit\u00e9e \u00e0 800\u00a0\u00b0C, tandis que le charbon pouvait atteindre 1\u00a0200\u00a0\u00b0C, am\u00e9liorant consid\u00e9rablement le rendement et permettant une production de masse. Cependant, cette strat\u00e9gie s&#039;av\u00e9ra initialement infructueuse. Le plus difficile de la transition du charbon de bois au charbon fut la reconstruction du four. Les fours utilis\u00e9s ne supportaient pas la temp\u00e9rature plus \u00e9lev\u00e9e de 1\u00a0200\u00a0\u00b0C.<\/p>\n\n\n\n<p>La perc\u00e9e s&#039;est produite avec la construction d&#039;un nouveau fourneau de 7,5 m\u00e8tres de profondeur et de 0,9 m\u00e8tre de diam\u00e8tre, avec l&#039;aide d&#039;un riche marchand. Ce fourneau \u00e0 chaux, appel\u00e9 \u00ab\u00a0type pot \u00e0 sak\u00e9\u00a0\u00bb, pr\u00e9sentait un diam\u00e8tre variable. En comparaison, le fourneau \u00e0 charbon pr\u00e9c\u00e9dent n&#039;avait qu&#039;une profondeur de 1,5 m\u00e8tre et un diam\u00e8tre de 0,84 m\u00e8tre, ce qui t\u00e9moigne d&#039;une diff\u00e9rence significative de capacit\u00e9. On l&#039;associe aussi au marbre utilis\u00e9 pour les sols et les murs des grands \u00e9tablissements, comme les h\u00f4tels. En r\u00e9alit\u00e9, elle est largement utilis\u00e9e dans de nombreux aspects de notre vie. Souvent absent de notre alimentation, ce calcium a r\u00e9cemment \u00e9t\u00e9 ajout\u00e9 \u00e0 de nombreux aliments.<br>Il est utilis\u00e9 de diverses mani\u00e8res, notamment pour la coagulation du konjac, l&#039;\u00e9limination des impuret\u00e9s lors du raffinage du sucre, comme neutralisant dans le sirop d&#039;amidon, comme conservateur et \u00e9mulsifiant dans le pain, et pour rehausser la texture des croquettes de poisson et des saucisses.
